𝐁𝐔𝐒𝐈𝐍𝐄𝐒𝐒 𝐋𝐄𝐒𝐒𝐎𝐍𝐒 𝐅𝐑𝐎𝐌 𝐉𝐀𝐘 𝐅𝐀𝐈
I finally experienced the famous dishes of Jay Fai in Bangkok. I first watched her on Netflix.
She’s a Michelin-starred chef, the first and only street-food chef in Thailand to receive this recognition.
More than the great meal, I was reminded of these business lessons:
𝟏.) 𝐂𝐎𝐌𝐌𝐈𝐓𝐌𝐄𝐍𝐓 𝐓𝐎 𝐓𝐇𝐄 𝐂𝐑𝐀𝐅𝐓
We were there for almost two hours and she cooked non-stop the entire time.
At 70+, she’s still on the line, still honing her skills. Many of us entrepeneurs get bored after a few years and chase something new.
This was a powerful reminder: excellence is built over decades, not years.
We have to show up daily, do the grind, and make no excuses!
𝟐.) 𝐏𝐑𝐎𝐂𝐄𝐒𝐒 𝐈𝐒 𝐏𝐎𝐖𝐄𝐑
I’m amazed at how she does it. She insists on cooking every dish herself, yet throughput stays high because the process is tight: as soon as a dish is done, the wok is swapped by staff. Of course, the ingredients are prepped and within reach. There are around 3 people assisting her, while she do all the cooking.
In the ~2 hours we were there, she likely cooked 50+ servings.
That’s what great systems do, they protect quality and maintain speed.
Unfortunately, I see many businesses with broken processes that delay action. Or, they implement complicated workflows that further slow down decisions, and then justifies it in the name of process compliance.
𝟑.) 𝐆𝐎𝐎𝐆𝐋𝐄 𝐑𝐄𝐕𝐈𝐄𝐖𝐒 𝐀𝐑𝐄𝐍’𝐓 𝐓𝐇𝐄 𝐖𝐇𝐎𝐋𝐄 𝐒𝐓𝐎𝐑𝐘
We almost didn’t go because of the bad reviews, i.e. rude staff, unclean place, etc.
But we didn’t experience any of that. Maybe they’ve changed already, which is good.
Not allowing selfies with Jay Fai? I can totally understand. She was cooking non-stop. If she entertained selfies, it would drastically delay serving time to accommodate everyone who wanted a photo.
By the way, getting reviews is something I’ve been advocating for many years. In this age where online reviews are so important, every business should proactively ask customers to leave feedback. Otherwise, the only voices that will be heard are the unsatisfied ones. Or worse, fake ones.
